Fall Food: Vegetarian 15-Bean Soup

It’s fall. Colder temps have set in and for the next several months, we all are going to be looking for comfort foods that warm our bellies. “Comfort food” doesn’t have to equate to “calorie-rich food” though. There are many soup and stew recipes that can be both filling and healthy! One of our favorites is this delicous vegetarian 15-bean soup that’s light on calories but rich with flavor. It’s a really adaptable recipe too. Add some whole wheat pasta or change up the vegetable combo — it’s up to you!

Vegetarian 15 Bean Soup

Ingredients

  • 15-bean soup mix (we use Bob’s Red Mill 13-bean soup mix, 29 oz. bag)
  • 1 quart low sodium vegetable broth
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 1 garlic clove, chopped
